about the chef
From a young age, Giovanni Scaraggi worked in various roles within the restaurant industry while studying Social Anthropology in Rome. Upon completing his studies, Giovanni moved to London, where he had to work in various restaurants (Italian, Mexican, Japanese) to face the costs of life.
Other long trips to Nepal and Thailand followed, which, although having other purposes, allowed him to focus on the role and importance of gastronomy for a culture. It is here that he realized that his true passion was cooking.
Giovanni returned to Rome to complete culinary school and started his carrier as a chef. He gained experience in Greece, Denmark (at Noma), and Japan (at Inua).
In 2016, he opened Sole Giaguaro in Rhodes, named after Italo Calvino’s book.
By Christmas 2022, he relocated the restaurant to the picturesque gastronomic neighborhood of Ano Petralona in Athens. Giovanni gained wider recognition in 2019 by participating in Master Chef.
